Tofu, Noodle & Veggie Bowl by @janetsmunchmeals 🤤 A bowl packed with so much veggies and flavour! ​.
​Recipe: 2 to 3 servings
Saute 1 block tofu cut in 1cm cubes, and a small package sliced shiitake mushrooms in bit of oil, browning on a few sides.

Roast a small bag of brussel sprouts (cut in half) and bundle of asparagus (tough bottom end trimmed off). Chop half of a seedless cucumber.

Dressing (2-3 servings):
Blend the following
2 T rice vinegar
1 T sesame oil
3 T avocado oil
1 T coconut aminos
1.5 tsp grated fresh ginger
1 garlic clove
1 nectarine*
1/8 tsp each kosher salt and pepper
* cook 1 diced nectarine over medium-low heat with a dash of water for about 3 to 5 minutes covered, until very soft.

Plate all the veggies over baby spinach or other greens, along with a bit of noodles. Drizzle dressing over top. Top with red chili flakes and fresh mint.

In heated saucepan, cook 1 large finely chopped onion and 4 minced garlic cloves in a little vegetable broth (or olive oil or splash water) until onion softened. Add 1 tbsp chili powder, 1 tsp cumin, 1/4 tsp chipotle, 1/4 tsp garlic powder, 1/4 tsp onion powder and cook another 30 seconds while stirring, adding more broth (or water) as needed. Mix in 2 tbsp tomato paste. Add 1 head cauliflower (chopped into florets) and mix. Add 2-15oz cans crushed tomatoes, 1 tbsp apple cider vinegar and 1 tbsp Dijon mustard and stir well. Simmer (covered) until cauliflower is fork tender, about 10-15 minutes. Add 1-15oz can pinto beans beans and cook a few more minutes until heated through. Add a generous amount of fresh thyme leaves, several turns black pepper and salt to taste. Serve with pasta or rice. Enjoy!

Pepper to taste
1 can chopped tomatoes 🍅
1 tbsp tomato paste
1 can chickpeas
1 can coconut milk 
some spinach

Sauté onion, garlic and ginger in a large pan for 3-5 min. Stir in spices, tomatoes and tomato paste, cook another 5 min. Add drained chickpeas, coconut milk and spinach and cook without lid for 10-15 min. Serve over brown rice 🍚.

​Black bean and Corn Burgers by @cookingforpeanuts 💚  A delicious recipe to try out for this week's meal prep!

Smokey black bean + corn burger: In a food processor, pulse 1-1/2 cups black beans until partly mashed with some whole beans remaining. Boil 1 large corn on stovetop and remove kernels with sharp knife once cooked. (Even better if you can roast the corn over a gas burner.) Combine in a large bowl: mashed beans, corn kernels, 1 finely diced large red onion, 2 large handfuls baby spinach leaves (roughly chopped), 1/2 cup cilantro (chopped), 2 tbsp tahini, 2 tbsp coconut aminos or low-sodium tamari/soy sauce, juice 1 lime, 2 tsp smoked paprika, 1 tsp garlic powder, 2 tsp ground cumin, 1-2 tsp chili powder, salt+pepper to taste. Mix with hands (or spoon) and gradually add oat flour until sticky enough to form patties (no more than 1 cup). Use hands to make roughly 7 burger patties. They shouldn’t be too thick or they won’t cook as well. (Optional: brush surface of the patties with a little olive oil.) Bake on lined baking sheet at 375F about 25 minutes, flipping half way. (Or you can even air fry these at 400F about 15-20 minutes).

Easy guacamole: mix together 3 very ripe avocados (mashed), juice 1 lime, 2 finely grated garlic cloves, salt to taste. Add sprinkle red chili flakes. Serve with sweet potato fries and enjoy!

Will be honest I’ve been struggling since my ultra and after a couple of failed runs it was good to get back out there and find some sort of pre-ultra form! 💪

Decided as I haven’t found a track to train on since my move permanently to Brackley do a 4 mile hilly tempo and push each mile harder to test not just myself physically but also my mental resolve 🏃‍♂️ .
With a few clinging niggles things are going in the right direction with a view of trying Buckingham @parkrunuk this Saturday for the first time and see where I’m actually at 😀

Anyone else take a long time to recover for large races like ultra marathons? If so how do you overcome the mental block after it rather than the physical side? 🤷‍♂️ .
