Follow the Most beautiful Banker turned Baker @meghnasfoodmagic
When I made this aloo bhaji during the video-shoot, the crew made me fry so many puris to eat street style puri bhaji.

Ingredients:
2 tbs oil (you could alternatively use 1 tbs oil and 1 tbs ghee too)
1 tsp Jeera
A pinch of methi dana (fenugreek seeds) - optional if you don't like the taste
1 tsp Ginger-Garlic paste
1 finely chopped Onion
Salt per taste
1/2 tsp turmeric powder (Haldi powder)
1-2 green chillies finely chopped
1 tsp Dhaniya Powder (Coriander Powder)
1 tsp Garam Masala
1 tsp Kashmiri Red Chilli powder
2 tomato puree (crushed tomatoes)
2-3 boiled potatoes (aloo) - not chopped but rather half--mashed 
water
some Kasuri methi (dried fenugreek leaves)

Method:
Heat up the pan
Add 2 tbs oil
And add 1 tsp Jeera
also, add just a pinch of methi dana (optional)
now add 1 tsp ginger garlic paste
add 1 onion finely chopped
now add salt so that onions get cooked quickly
Add 1/2 tsp haldi powder
Add finely chopped green chillies
Add 1 tsp Dhaniya powder
now add 1 tsp garam masala
cook all masalas in oil well, keep stirring the spatula
now add 1 tsp kashmiri red chili powder, it will give nice color to our aloo sabzi
mix well
time to add tomato puree, I have crushed 2 tomatoes
mix everything well
Cover the pan with lead and let it cook for 5-10 minutes so that tomatoes get cooked well
Tip: When tomatoes leave oil on the sides, it's time to add potatoes
Add potatoes half-mashed (not cut or chopped)
And add 1/2 cup water
Mix well
Again cover the pan with a lead, let it cook till you get 1 boil
Aloo sabzi is almost ready
Take some fenugreek dry leaves (kasuri methi) and crush it between palms and add to aloo sabzi
Take out sabzi in a bowl, garnish with coriander leave and serve with Puri and chopped onions with lemon
